Here are some examples of tools that you can use for producing online quizzes. Some you can also embed in your own wiki pages.

 

ProProfs Quiz Maker

This tool is very easy to use and has multiple question types: Multiple choice, Essay, Fill in the blanks and Multiple Answers. Here's a quick example of an embedded ProProf's quiz:
